Explore the art of wildcrafting with Berries and Flour! In this hands-on workshop, you'll create two beloved seasonal preserves that celebrate the flavors of early summer: traditional Italian black walnut nocino and fragrant elderflower cordial.


You'll prepare preserved young black walnuts for nocino, a rich and complex liqueur with earthy, herbal notes of nut, spice, citrus, and a pleasant bitterness. You'll also learn how to transform delicate elderflowers into a bright, floral cordial that captures the essence of summer and can be enjoyed in cocktails, sparkling water, desserts, and more.

We will provide all of the basic ingredients, including local Down East Vodka from Silver Tree Beer & Spirits in Paxton, and you'll have the opportunity to customize your nocino with locally sourced herbs, berries, spices, and edible flowers. For the elderflower cordial, you'll learn techniques for extracting flavor and preserving the fleeting blossoms at their peak.


While we work, we'll explore the natural history, folklore, and culinary traditions surrounding both black walnut trees (Juglans nigra) and elderflowers, discussing responsible foraging practices and the many ways these wild ingredients have been used throughout history.


Participants will leave with their own prepared nocino and elderflower cordial, along with recipes, techniques, and inspiration for incorporating wildcrafted ingredients into their home kitchens.


Location: Prairie Fruits Farm Classroom

4410 N Lincoln Ave, Champaign, IL

Parking: General parking is available in the gravel lot. ADA parking is located south of the farmhouse. The classroom is in the white building with black trim west of the gardens. Check in at the farm store at the front of the building.
