Moonglo cheese with roasted Brussel Sprouts with Pepitas and Dates

Servings: 6

2 pounds Brussel sprouts, trimmed and halved

1 tablespoon olive oil

salt and ground pepper to taste

1 cup shredded Moonglo cheese

1/4 cup toasted pumpkin seeds (pepitas)

1/2 cup chopped dates.

Heat oven to 400 F.

Spread brussel sprouts on a rimmed baking sheet. Drizzle with olive oil and toss to coat.  Season with salt and pepper.  

Roast for 30-40 minutes or until tender and browned.  Sprinkle with shredded cheese and return to the oven for 10 minutes.  

Transfer to a beautiful serving dish and sprinkle with toasted pumpkin seeds and chopped dates.
